I love baking- I find it therapeutic, whether upset or angry – baking sorts me out! Some of my fondest memories of being a child are baking ones, and watching the oven like a TV, watching the cakes rise!
So being told my massive eczema flare ups were due to dairy products and egg, I thought cakes were off the menu forever! That is until I made a trip with a friend to Sweet Tooth Cupcakery in Chorlton, in Manchester a couple of years ago, where lo and behold they had vegan cupcakes! Until that point I had not even though about vegan recipes for baking never-mind anything else! The photo below is one of there’s- I cannot claim that beauty!
It seems obvious now I know, but not including butter, eggs or milk in baking was a revelation at the time and I still think its the work of genius!
So I investigated further and now these two books or probably the most looked at and used books in my house! Vegan Cookies invade your cookies jar (in other words biscuits- although there are cookies as we would know them too) and Vegan Cupcakes take over the world!
And please, these sweet treats aren’t just for vegans so don’t think you don’t need these books!! Think about it- lower cholesterol levels due to the fact there’s no egg and you can lick the spoon whilst making them as much as you want without worrying about consuming raw egg!!!

Because they are American all the measurements are in cups and table or tea spoons, you can buy measuring cups for any supermarket these days or online. I actually find it much easier and quicker using cups as there is non of the weighing out to do, all you do is scoop!
Most of the ingredients are in any supermarket, but for example in most of the cupcakes canola oil is used, I just use sunflower. And molasses is substituted for treacle- you get the picture!
